Apricots & EVOO Caramel

Apricots & EVOO Caramel

The easiest ‘caramel’ you’ll ever make—equal parts maple syrup and EVOO, whisked until smooth and silky.

This two ingredient topping is the perfect sauce to elevate a simple dessert, or make your breakfast that bit more indulgent. Right now, we’re pouring it over grilled apricots, nestled in thick greek yoghurt. Smokiness from the charred apricots, the richness of the yoghurt and the sweet, peppery caramel make this a winning dessert you can pull together in minutes.

Roasted butternut squash brings a sweet, golden richness to the dish, perfectly paired with Fusilli Lunghi, which wraps around every bit of flavour. Crematta creates a silky sauce, and just before serving, a fresh cut of Burrella adds a creamy, delicate finish that ties it all together.
