Healing Turmeric Soup Recipe With Olive Oil

This tumeric soup recipe is packed with curcumin, an anti-inflammatory, antioxidant, immune-boosting compound that can help keep colds at bay turmeric is there to lend a helping hand during winter.

    The healing tumeric soup recipe

    Serves 2

    1. Heat the olive oil in a large pot. Add the onion and ginger, cover, and let them soften for a few minutes.
    2. Add the garlic and fresh turmeric, cover, and cook for a few minutes more.
    3. Stir in the turmeric powder, then add the chicken stock. Reduce heat to very low and gently simmer for about 30 minutes.
    4. In a separate pot, bring water to a boil and add the pearl couscous.
    5. Place the vegetables in a sieve over the couscous and cover with a lid to steam them.
    6. Strain the stock (don't discard the solids! Keep them in the fridge for a few days to toss into soups and salads).
    7. Divide the couscous and vegetables between two bowls, pour over the stock, and drizzle generously with extra virgin olive oil.

    This dish is originally made with infused homemade chicken stock, but you can also use plant-based stock to make this veggie or vegan friendly. 

    If you can't find pearl couscous you can opt for rice, pasta or another grain of your choice!
