Every oil will be a different batch. Our certified olive oil sommelier and founder, Sarah Vachon, curates new, exciting extra virgin olive oils from small-scale producers that change depending on availability.
Although the nature of the harvest and the size of our community changes, we will work to get you several different regions, styles, and varieties throughout the year.
Nose: Aromas of green bell pepper and chicory, followed by softer notes of creamy artichoke and red apple. There’s also herbal notes too, like wild spearmint.

Palate: Has a medium bitterness that’s short, with a chicory and nutty note. The finish is like a chile on your throat, with a lingering spice.

Pairings: Drizzle over warming pasta dishes, seasonal salads, pair simply with bread, or even add to a cocktail. This oil intrigues without overpowering.
