Meet the producers: the Sapora family.
Combining tradition and innovation, the Sapora family cultivate 40 hectares of land, championing indigenous cultivars from Sabina, where their groves lie. They firmly believe in working with nature, farming using organic practices and respecting the natural cycle of events. Like the world around us, their oil is ever evolving. Each year, expect a slightly different smell, flavour, and experience.
Navigating a new region means leaning on solid word-of-mouth. Sarah was first introduced to the Sapora family by a renowned olive oil judge (Johnny Madge), who told stories of the strength of Daniela and her beautiful oils. Sarah was quickly introduced to her kind son, Gabriele, who helped us secure a special batch of their oil with plans to share it with our Club later in the year.
In the most heartbreaking scenario, Gabriele passed away suddenly this summer, before we could share what he worked so hard to produce with his family.
But his legacy lives on—through a community that adored him, a family that continues with dignity and strength, groves that still carry his touch, and this final batch he produced. Daniela now leads the estate once again, with her united family by her side, honouring both tradition and the future, resilient as the trees they steward.
In their words, olive oil “tells a story that changes and evolves, keeping all the good of the past inside.” This oil does just that. And it carries a family’s devotion, a land’s identity, and the memory of Gabriele Sapora.

The region.
Located about 50 kilometres north of Rome and about 25 kilometres west of Rieti, this region is in the heart of Sabina, an area of rolling hills, lush greenery, and picturesque medieval villages.
This lesser-known area is also famous for its production of high-quality olive oil, and olive groves stretch out across the Sabine Hills, adding to the magic of the region.
