The power of polyphenols.
Many of the health benefits of EVOO are directly due to the presence of polyphenols: organic compounds found in plants that act as antioxidants.
One of the most exciting—oleocanthal —is only found in olives. The EU specifies that EVOO should have a count of 250 mg/kg to qualify as ‘high polyphenol’.

Questions?
Is olive oil really that healthy?
Absolutely. Extra virgin olive oil is nature’s ibuprofen. It’s an anti-inflammatory packed with antioxidants and is known to fight inflammation. It also supports better gut health, a happy heart, and balanced blood sugar.
What are polyphenols?
Polyphenols are organic compounds and powerful antioxidants found in plants to protect themselves. They are abundant in extra virgin olive oils. The more processed the olive oil, the fewer polyphenols it contains—which is why extra virgin is kept natural.
How much do I need to have?
The recommendation given is the Mediterranean amount—four or five tablespoons a day. You can use it on salads, in cooking, or even drink it directly. The less processed you keep it, the more antioxidants remain intact.
How is extra virgin olive oil different from seed oil?
Extra virgin olive oil is olives crushed, squeezed and pressed. Unlike many other oils – including refined “olive oil” – it is not highly processed, bleached, or deodorised; it’s essentially the fresh juice of the fruit.
How does it improve digestion?
Olive oil is said to line the gut, soften the stool, and help relieve constipation. It’s also believed to help reduce bloating and support beneficial gut microbes.
How does it support heart health?
Olive oil is a healthy fat containing oleuropein, a compound that supports healthy blood flow and helps prevent blood clots. Its anti-inflammatory and antioxidant properties also support heart function.
How does it reduce inflammation?
Extra virgin olive oil contains oleocanthal, a potent polyphenol with anti-inflammatory effects similar to low-dose ibuprofen, but entirely natural.
Does heating extra virgin olive oil affect the nutritional value?
Heat will reduce total polyphenols, but extra virgin olive oil remains nutritionally valuable even when roasting or frying, and generally outperforms refined seed oils in both health and flavour.
Do I need to drink it neat first thing in the morning to get the health benefits?
Olive oil is food, not a supplement: a delicious and nutritious addition to meals. Taking a spoon before other foods might help steady energy and reduce sugar cravings. Given a daily dose of 30-50ml, you can do both: a teaspoon in the morning and the rest throughout meals.
