Shaved frozen peaches

A fresh twist on the viral peaches and cream dessert. 

Peach season is in full swing. And frozen shaved fruit is all the rage. So, what better way to celebrate than to combine the two?

Tangy yogurt, crunchy pistachios, sweet peaches and the essential golden drizzle to elevate all the textures and flavours. It's only 4 ingredients and takes less than 10 minutes to assemble, making it the perfect summer breakfast or snack.

    Here's the method:

    Makes one serving

    • Place you peaches in the freezer (whole) and leave for at least 3 hours. 
    • Roughly chop your pistachios and set aside for later. 
    • Once the peaches are frozen you can assemble your bowl.
    • First, add a good dollop of yogurt.
    • Then, using a fine grater, grate your frozen peach onto your yogurt. This can be a little cold on your fingers so watch out!
    • Lastly top with your chopped pistachios and a good drizzle of EVOO (we recommend the Greek) and add a drizzle of honey if you'd like a little extra sweetness.
    How to make it your own:

    If you don't like peaches you can swap for a different fruit, such as nectarine or mango. This works best for a fruit with a slightly lower water content, so we'd recommend avoiding things like strawberries to minimise the mess!
